- 1 cup cooked orzo pasta
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 garlic clove, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lemon (zest and juice)
- Olive oil for drizzling
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the ground chicken, cooked orzo, breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, dried oregano, salt, black pepper, lemon zest, and lemon juice. Mix until well combined.
- Form the mixture into meatballs, about one inch in diameter, and place them on a baking sheet lined with parchment paper.
- Drizzle the meatballs lightly with olive oil.
- Bake for 20-25 minutes or until cooked through and golden brown.
- Serve the meatballs hot over a bed of lemon orzo, and sprinkle with fresh parsley.
