Description

A refreshing and flavor-packed side dish made with rice, lemon juice, and fresh herbs, perfect for gatherings or family dinners.

Ingredients

Scale
  • 1 cup rice
  • 2 cups vegetable broth or water
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or dill) for garnish

Instructions

  1. Heat the olive oil in a saucepan over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent. This usually takes around 3-4 minutes.
  2. Add the rice to the saucepan and stir to coat the grains in the oil and onions. Let it cook for about 2 minutes.
  3. Pour in the vegetable broth or water, and add the lemon juice, salt, and pepper. Bring to a boil.
  4. Lower the heat, cover the saucepan, and let it simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Remove from heat and let it sit, covered, for another 5 minutes. Fluff with a fork, garnish with fresh herbs, and serve.

Notes

For best results, allow the rice to rest covered after cooking for fluffy grains.
