Ingredients

- 1 cup rice
- 2 cups vegetable broth or water
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup lemon juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh herbs (such as parsley or dill) for garnish
Instructions
- Heat the olive oil in a saucepan over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent. This usually takes around 3-4 minutes.
- Add the rice to the saucepan and stir to coat the grains in the oil and onions. Let it cook for about 2 minutes.
- Pour in the vegetable broth or water, and add the lemon juice, salt, and pepper. Bring to a boil.
- Lower the heat, cover the saucepan, and let it simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit, covered, for another 5 minutes. Fluff with a fork, garnish with fresh herbs, and serve.
Notes
For best results, allow the rice to rest covered after cooking for fluffy grains.
