Ingredients

- 1 lb ground beef or lamb
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg
- Olive oil for frying
- Tzatziki sauce
- Cooked rice or quinoa
- Diced cucumbers and tomatoes
- Feta cheese
Instructions
- Combine the ground meat, breadcrumbs, Parmesan, parsley, minced garlic, oregano, salt, pepper, and egg in a large mixing bowl. Mix until well combined and form into meatballs, about 1 to 1.5 inches in size.
- Heat olive oil in a skillet over medium heat. Add the meatballs and cook for 10-12 minutes, turning occasionally until browned and cooked through.
- Assemble your bowls with a base of cooked rice or quinoa. Add the meatballs, diced cucumbers, tomatoes, feta cheese, and a dollop of tzatziki sauce. Serve and enjoy!
Notes
Store leftovers separately in the fridge for 3-4 days or freeze for up to 3 months. Reheat thoroughly before serving.
