Description

A comforting Greek Meatball Bowl filled with tender meatballs, fresh vegetables, and creamy tzatziki, perfect for family dinners or casual get-togethers.


Ingredients

  • 1 lb ground beef or lamb
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg
  • Olive oil for frying
  • Tzatziki sauce
  • Cooked rice or quinoa
  • Diced cucumbers and tomatoes
  • Feta cheese

Instructions

  1. Combine the ground meat, breadcrumbs, Parmesan, parsley, minced garlic, oregano, salt, pepper, and egg in a large mixing bowl. Mix until well combined and form into meatballs, about 1 to 1.5 inches in size.
  2. Heat olive oil in a skillet over medium heat. Add the meatballs and cook for 10-12 minutes, turning occasionally until browned and cooked through.
  3. Assemble your bowls with a base of cooked rice or quinoa. Add the meatballs, diced cucumbers, tomatoes, feta cheese, and a dollop of tzatziki sauce. Serve and enjoy!

Notes

Store leftovers separately in the fridge for 3-4 days or freeze for up to 3 months. Reheat thoroughly before serving.
