  • 3 to 4 sprigs fresh dill
  • 1 shallot (minced)
  • 3 tablespoons minced garlic
  • 1 lemon (juiced and zested)
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon paprika
  • 1 tablespoon dried oregano

Instructions

  1. Pat dry the chicken: Start by patting the chicken thighs dry with a paper towel.
  2. Make the marinade: In a mixing bowl, combine the Greek yogurt, chopped dill, minced shallots, minced garlic, lemon juice, lemon zest, salt, pepper, paprika, and oregano.
  3. Marinate the chicken: Add the chicken thighs to the bowl, tossing until they are well-coated in the marinade.
  4. Cover the bowl with plastic wrap and let it rest in the fridge for at least 1 hour.
  5. Preheat the grill to 400°F.
  6. Grill the chicken for about 8 to 10 minutes, flipping halfway through.
  7. Rest the chicken for at least five minutes before serving.
