- 8 to 10 boneless skinless chicken thighs
- 1 cup Greek yogurt (plain, full-fat)
- 3 to 4 sprigs fresh dill
- 1 shallot (minced)
- 3 tablespoons minced garlic
- 1 lemon (juiced and zested)
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon paprika
- 1 tablespoon dried oregano
Instructions
- Pat dry the chicken: Start by patting the chicken thighs dry with a paper towel.
- Make the marinade: In a mixing bowl, combine the Greek yogurt, chopped dill, minced shallots, minced garlic, lemon juice, lemon zest, salt, pepper, paprika, and oregano.
- Marinate the chicken: Add the chicken thighs to the bowl, tossing until they are well-coated in the marinade.
- Cover the bowl with plastic wrap and let it rest in the fridge for at least 1 hour.
- Preheat the grill to 400°F.
- Grill the chicken for about 8 to 10 minutes, flipping halfway through.
- Rest the chicken for at least five minutes before serving.
