- 2 boneless, skinless chicken breasts (about 1.25 lbs)
- 1 ripe avocado, sliced
- 8 large romaine or butter lettuce leaves
- 1 cup cherry tomatoes, halved
- 1 tablespoon olive oil
- 1 tablespoon lime juice (for drizzling before serving)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and black pepper, to taste
- 2 tablespoons plain Greek yogurt or light ranch (optional)
- 1/4 cup chopped red onion (optional)
- 2 tablespoons chopped cilantro (optional)
Instructions
- Begin by brushing the chicken with olive oil, and season both sides with garlic powder, paprika, salt, and pepper. Grill the chicken on medium heat for about 5 to 7 minutes per side or until it reaches an internal temperature of 165°F. Once done, let it rest for 5 minutes before slicing it thinly.
- While the chicken is resting, wash and dry the lettuce leaves thoroughly. Slice the avocado, halve the cherry tomatoes, and chop the onion and cilantro if you choose to include them.
- Layout the lettuce leaves on a clean surface. Start layering with sliced chicken, avocado, cherry tomatoes, and any optional toppings. Don’t forget to drizzle lime juice over the top and add the yogurt or ranch if desired.
- Carefully fold the lettuce leaves into wraps. If you like, garnish with cilantro and serve immediately, or chill them briefly for a refreshing treat.
