- 2 cups cooked quinoa
- 1 pound grilled chicken breast, sliced
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
- Tortilla chips (optional)
Instructions
- In a large bowl, combine the cooked quinoa, black beans, and corn.
- Add the sliced grilled chicken, diced avocado, halved cherry tomatoes, diced red onion, and chopped cilantro.
- Squeeze fresh lime juice over the mixture and season with salt and pepper to taste.
- Toss gently to combine without mashing the avocado.
- Serve in bowls with optional tortilla chips on the side.
