Ingredients

  • 1 pound grilled chicken breast, sliced
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste
  • Tortilla chips (optional)

Instructions

  1. In a large bowl, combine the cooked quinoa, black beans, and corn.
  2. Add the sliced grilled chicken, diced avocado, halved cherry tomatoes, diced red onion, and chopped cilantro.
  3. Squeeze fresh lime juice over the mixture and season with salt and pepper to taste.
  4. Toss gently to combine without mashing the avocado.
  5. Serve in bowls with optional tortilla chips on the side.
