Ingredients

  • 1 pound Flank, Ribeye, or New York Strip
  • 2 medium Zucchini
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 tablespoon Dijon Mustard
  • 1 cup Sour Cream or Greek Yogurt
  • 2 tablespoons Fresh Herbs (Chives or Parsley)
  • 2 cups Cooked Rice or Mashed Potatoes

Instructions

  1. Preheat your grill to medium-high heat.
  2. Slice the zucchini into rounds or strips and toss them in a bowl with 1 tablespoon olive oil, garlic powder, onion powder, and a sprinkle of salt and pepper.
  3. Rub the remaining olive oil over the steak and season with salt, pepper, and Dijon mustard (optional).
  4. Place the zucchini on one side of the grill and the steak on the other. Grill the steak for 4-6 minutes per side and the zucchini for 3-4 minutes each side.
  5. Remove everything from the grill and let the steak rest for a few minutes before slicing it against the grain.
  6. Mix the sour cream or yogurt with fresh herbs in a small bowl.
  7. Serve sliced steak over cooked rice or mashed potatoes, topped with grilled zucchini and the herb-infused creamy sauce.
