- 1 pound Flank, Ribeye, or New York Strip
- 2 medium Zucchini
- 2 tablespoons Olive Oil
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 tablespoon Dijon Mustard
- 1 cup Sour Cream or Greek Yogurt
- 2 tablespoons Fresh Herbs (Chives or Parsley)
- 2 cups Cooked Rice or Mashed Potatoes
Instructions
- Preheat your grill to medium-high heat.
- Slice the zucchini into rounds or strips and toss them in a bowl with 1 tablespoon olive oil, garlic powder, onion powder, and a sprinkle of salt and pepper.
- Rub the remaining olive oil over the steak and season with salt, pepper, and Dijon mustard (optional).
- Place the zucchini on one side of the grill and the steak on the other. Grill the steak for 4-6 minutes per side and the zucchini for 3-4 minutes each side.
- Remove everything from the grill and let the steak rest for a few minutes before slicing it against the grain.
- Mix the sour cream or yogurt with fresh herbs in a small bowl.
- Serve sliced steak over cooked rice or mashed potatoes, topped with grilled zucchini and the herb-infused creamy sauce.
