- 4 medium zucchini
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup marinara sauce
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (mozzarella or cheddar)
- Olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchini in half lengthwise and scoop out the center to create ‘boats.’
- In a skillet, heat a splash of olive oil over medium heat. Add the diced onion and minced garlic; sauté until the onion is translucent.
- Next, add the ground beef. Cook until browned, breaking it apart with a spatula.
- Now stir in the marinara sauce, Italian seasoning, salt, and pepper. Let it simmer for 2-3 minutes.
- Take each zucchini boat and fill it with the beef mixture. Place them snugly in a baking dish.
- Top each boat with shredded cheese.
- Bake in the preheated oven for 25-30 minutes, until the zucchini is tender and cheese is bubbly.
- Serve warm and enjoy!
Notes
Serve with a fresh salad or garlic bread. Leftovers can be refrigerated for 3-4 days or frozen for 2-3 months.
