Description

Deliciously stuffed zucchini with seasoned ground beef, marinara, and cheese, perfect for family dinners.


Ingredients

  • 4 medium zucchini
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup marinara sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (mozzarella or cheddar)
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchini in half lengthwise and scoop out the center to create ‘boats.’
  3. In a skillet, heat a splash of olive oil over medium heat. Add the diced onion and minced garlic; sauté until the onion is translucent.
  4. Next, add the ground beef. Cook until browned, breaking it apart with a spatula.
  5. Now stir in the marinara sauce, Italian seasoning, salt, and pepper. Let it simmer for 2-3 minutes.
  6. Take each zucchini boat and fill it with the beef mixture. Place them snugly in a baking dish.
  7. Top each boat with shredded cheese.
  8. Bake in the preheated oven for 25-30 minutes, until the zucchini is tender and cheese is bubbly.
  9. Serve warm and enjoy!

Notes

Serve with a fresh salad or garlic bread. Leftovers can be refrigerated for 3-4 days or frozen for 2-3 months.
