  • 1/2 cup brown sugar
  • 1/3 cup milk
  • 1/2 cup oil (avocado, canola, or any other neutral oil)
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/2 cup mini chocolate chips
  • 1 cup wild blueberries (frozen or fresh)
  • Brown sugar (for sprinkling)

Instructions

  1. Preheat your oven to 350°F.
  2. Combine the Greek yogurt, milk, brown sugar, eggs, oil, and vanilla extract in a medium-sized bowl. Mix until smooth.
  3. Mix the dry ingredients: white whole wheat flour, rolled oats, baking powder, and salt in another bowl.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined.
  5. Add the mini chocolate chips and blueberries, stirring gently to incorporate without breaking the berries.
  6. Scoop the batter into a lined muffin pan. Sprinkle brown sugar over the tops for added sweetness and crunch.
  7. Bake for 18-22 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  8. Cool for a few minutes before serving.
