A delightful, healthy chicken salad filled with juicy grapes, crunchy pecans, and tender chicken, perfect for picnics and quick lunches.


Ingredients

  • 2.5 cups cooked, diced or shredded chicken
  • 3 stalks of celery – about 1/2 cup diced
  • 1 cup sliced grapes
  • 1/3 cup chopped pecans
  • 1/3 cup chopped red onion
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayo
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 12 teaspoons fresh lemon zest
  • Salt and pepper – to taste

Instructions

  1. Wash the grapes in a bowl with water and baking soda for 5 minutes, then rinse and dry.
  2. Combine the grapes, cooked chicken, chopped celery, pecans, and red onion in a medium bowl.
  3. Mix the Greek yogurt, mayo, Dijon mustard, lemon juice, lemon zest, salt, and pepper in another bowl until well combined.
  4. Add the creamy dressing to the chicken and vegetable mixture and toss gently until combined.
  5. Serve immediately or chill in the fridge for a few hours before serving.

Notes

For the most refreshing flavor, let the salad chill in the fridge for a couple of hours before serving. This allows all the flavors to meld beautifully.
