A delightful, healthy chicken salad filled with juicy grapes, crunchy pecans, and tender chicken, perfect for picnics and quick lunches.
Ingredients

- 2.5 cups cooked, diced or shredded chicken
- 3 stalks of celery – about 1/2 cup diced
- 1 cup sliced grapes
- 1/3 cup chopped pecans
- 1/3 cup chopped red onion
- 1/2 cup plain Greek yogurt
- 1/4 cup mayo
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon juice
- 1–2 teaspoons fresh lemon zest
- Salt and pepper – to taste
Instructions
- Wash the grapes in a bowl with water and baking soda for 5 minutes, then rinse and dry.
- Combine the grapes, cooked chicken, chopped celery, pecans, and red onion in a medium bowl.
- Mix the Greek yogurt, mayo, Dijon mustard, lemon juice, lemon zest, salt, and pepper in another bowl until well combined.
- Add the creamy dressing to the chicken and vegetable mixture and toss gently until combined.
- Serve immediately or chill in the fridge for a few hours before serving.
Notes
For the most refreshing flavor, let the salad chill in the fridge for a couple of hours before serving. This allows all the flavors to meld beautifully.
