Ingredients
- Boneless, skinless chicken breast or thighs, cut into 1-inch pieces
- Sweet potatoes, peeled and cut into uniform 1-inch cubes
- Olive oil or avocado oil, for roasting
- Smoked paprika
- Garlic powder
- Onion powder
- Dried oregano
- Dried thyme
- Salt
- Black pepper
- Cayenne pepper (optional)
- Broccoli florets
- Bell peppers
- Red onion (for roasting)
- Fresh spinach or kale (added after cooking)
- Fresh lime juice (optional)
- Balsamic glaze (optional)
- Lemon-tahini dressing (optional)

Instructions
- Preheat your oven to 400°F (200°C) and line two large baking sheets with parchment paper.
- Cut the sweet potatoes into 1-inch cubes, then toss them with olive oil and half of the seasoning blend. Spread them evenly on one baking sheet.
- Cut the chicken into 1-inch pieces, coat them with olive oil and the remaining seasoning. Place the chicken on the second baking sheet.
- Roast the sweet potatoes for 15 minutes, then add the chicken and any optional vegetables you’d like to include. Continue roasting for an additional 15-20 minutes until everything is cooked through and tender.
- Once roasted, divide the sweet potatoes and chicken into bowls and top with fresh spinach or kale.
- Drizzle your dressing of choice on top and garnish with herbs, sesame seeds, or nuts. Serve immediately and enjoy!
