Delicious and nutritious energy balls made with Medjool dates, almonds, and cocoa powder, perfect for a quick snack.
Ingredients

- 1 1/2 cups Medjool dates (pitted)
- 1 cup raw almonds
- 3 tablespoons cocoa powder (or cacao powder)
- 1/2 teaspoon pure vanilla extract
- 2–3 pinches sea salt
- 2–3 teaspoons water
Instructions
- Place the pitted dates and raw almonds in the bowl of a food processor. Pulse until the almonds break down into medium chunks.
- Add the cocoa powder, vanilla extract, and a couple of pinches of sea salt. Process until the mixture becomes thick and sticky.
- Assess the moisture level and add water as needed until the mixture holds together.
- Scoop out tablespoon-sized portions and roll them into balls.
- Arrange the balls on a baking sheet lined with parchment paper and refrigerate for 20 minutes to set.
- Transfer to an airtight container and store in the fridge for up to 1-2 weeks.
Notes
Use fresh Medjool dates for the best flavor. Adjust the size of the energy balls to your preference.
