Description

Delicious and nutritious energy balls made with Medjool dates, almonds, and cocoa powder, perfect for a quick snack.


Ingredients

  • 1 1/2 cups Medjool dates (pitted)
  • 1 cup raw almonds
  • 3 tablespoons cocoa powder (or cacao powder)
  • 1/2 teaspoon pure vanilla extract
  • 23 pinches sea salt
  • 23 teaspoons water

Instructions

  1. Place the pitted dates and raw almonds in the bowl of a food processor. Pulse until the almonds break down into medium chunks.
  2. Add the cocoa powder, vanilla extract, and a couple of pinches of sea salt. Process until the mixture becomes thick and sticky.
  3. Assess the moisture level and add water as needed until the mixture holds together.
  4. Scoop out tablespoon-sized portions and roll them into balls.
  5. Arrange the balls on a baking sheet lined with parchment paper and refrigerate for 20 minutes to set.
  6. Transfer to an airtight container and store in the fridge for up to 1-2 weeks.

Notes

Use fresh Medjool dates for the best flavor. Adjust the size of the energy balls to your preference.
