- 12 lasagna noodles
- 2 cups ricotta cheese
- 3 cups marinara sauce
- 2 cups spinach, chopped
- 1 zucchini, sliced
- 1 bell pepper, diced
- 2 cups mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- Heat olive oil in a skillet and sauté zucchini and bell pepper until tender.
- Mix ricotta cheese with spinach, Italian seasoning, salt, and pepper.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Layer 4 lasagna noodles over the sauce.
- Add half of the ricotta mixture, half of the sautéed vegetables, and a third of the mozzarella cheese.
- Repeat the layers, ending with noodles topped with marinara and mozzarella cheese.
- Sprinkle Parmesan cheese on top.
- Bake for 45 minutes until bubbly and golden.
- Let sit for 10 minutes before serving.
Notes
For a richer flavor, add some fresh herbs like basil or oregano.
