- 1 cup mashed sweet potato
- 2 oz unsweetened dark baking chocolate
- 1/4 cup creamy cashew butter or almond butter
- 1/4 cup pure maple syrup
- 1 egg
- 1 egg yolk
- 1 tsp pure vanilla extract
- 1/3 cup cacao powder
- 1 Tbsp coconut flour
- 1/2 tsp baking soda
- 1/8 tsp pink salt
- 1/2 cup dark chocolate chips
- 1/2 cup chopped pecans or walnuts
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper or lightly grease it.
- Combine the mashed sweet potato and melted dark chocolate in a large mixing bowl.
- Add the creamy cashew butter (or almond butter), pure maple syrup, egg, egg yolk, and pure vanilla extract. Mix until smooth.
- Gradually incorporate cacao powder, coconut flour, baking soda, and pink salt. Stir until no dry streaks remain.
- Fold in dark chocolate chips and chopped pecans or walnuts.
- Pour the batter into the prepared baking dish, spreading it evenly.
- Bake for about 20-25 minutes until the edges look firm and a toothpick inserted comes out clean or with a few moist crumbs.
- Allow to cool for about 10-15 minutes before slicing and serving.
Notes
Serve warm with vanilla ice cream or fresh fruit for an extra treat. Store leftovers in an airtight container in the fridge for up to five days.
