Description

A delicious and nutritious chocolate granola made with gluten-free ingredients, perfect for snacking or adding to breakfast.


Ingredients

  • 3 cups rolled oats (gluten free)
  • ½ cup unsweetened cocoa powder
  • ⅓ cup Truvia (or coconut sugar)
  • ½ cup shredded coconut (unsweetened)
  • ½ cup raw almonds (chopped)
  • ¼ cup walnuts (chopped)
  • 1 tbsp chia seeds
  • ½ tsp salt
  • ½ cup coconut oil
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • ½ cup chocolate chips

Instructions

  1. Preheat your oven to 275°F (135°C) and prepare two baking pans by spraying them with non-stick spray.
  2. In a large mixing bowl, stir together the rolled oats, cocoa powder, Truvia, shredded coconut, chopped almonds, chopped walnuts, chia seeds, and salt.
  3. In a separate bowl, combine the melted coconut oil, maple syrup, and vanilla extract. Stir to mix.
  4. Pour the wet ingredients into the dry ingredients and stir until every oat is coated.
  5. Spread the granola mixture evenly across the prepared baking pans. Bake for about 40-45 minutes, stirring every 15 minutes.
  6. When golden brown, remove from the oven and let cool. Mix in the chocolate chips.
  7. Store in an airtight container and enjoy!
