Ingredients

  • 1 cup Greek yogurt
  • 1/4 cup honey
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: chocolate chips or nuts

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mash the ripe bananas in a bowl until smooth.
  3. Mix in the Greek yogurt, honey, egg, and vanilla extract until everything is well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gently fold the wet ingredients into the dry ingredients until just combined—don’t overmix!
  6. If you like, fold in some chocolate chips or nuts for an extra treat.
  7. Fill your muffin cups about three-quarters full with the batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let them cool for a few minutes before transferring the muffins to a wire rack.
