- 2 ripe bananas
- 1 cup Greek yogurt
- 1/4 cup honey
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Optional: chocolate chips or nuts
Instructions
- Preheat your oven to 375°F (190°C).
- Mash the ripe bananas in a bowl until smooth.
- Mix in the Greek yogurt, honey, egg, and vanilla extract until everything is well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gently fold the wet ingredients into the dry ingredients until just combined—don’t overmix!
- If you like, fold in some chocolate chips or nuts for an extra treat.
- Fill your muffin cups about three-quarters full with the batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let them cool for a few minutes before transferring the muffins to a wire rack.
Notes
Store leftovers in an airtight container in the fridge for up to 5 days, or freeze for up to 3 months.
