Ingredients

  • 1/2 cup natural peanut butter
  • 1/4 cup sweetener (such as erythritol or coconut sugar)
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the almond flour, peanut butter, sweetener, egg, vanilla extract, baking soda, and salt in a mixing bowl. Mix until a dough forms.
  3. Scoop out the dough with a tablespoon and roll it into balls, placing them on a lined baking sheet.
  4. Flatten each ball with the back of a fork.
  5. Bake for 10-12 minutes or until golden.
  6. Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack.

Notes

Use natural peanut butter without added sugar for the best flavor. Don’t overbake to ensure soft cookies.
