- 1 cup almond flour
- 1/2 cup natural peanut butter
- 1/4 cup sweetener (such as erythritol or coconut sugar)
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon baking soda
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the almond flour, peanut butter, sweetener, egg, vanilla extract, baking soda, and salt in a mixing bowl. Mix until a dough forms.
- Scoop out the dough with a tablespoon and roll it into balls, placing them on a lined baking sheet.
- Flatten each ball with the back of a fork.
- Bake for 10-12 minutes or until golden.
- Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack.
Notes
Use natural peanut butter without added sugar for the best flavor. Don’t overbake to ensure soft cookies.
