Healthy Zucchini Fritters

Description

Delicious and crunchy zucchini fritters that are easy to make and perfect for any occasion.


Ingredients

  • 2 medium zucchinis, grated
  • 2 large eggs
  • 1/4 cup oat flour (or almond flour for a low-carb option)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup plain Greek yogurt or cottage cheese
  • 1 garlic clove, finely minced
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano or thyme
  • 2 tbsp chopped fresh parsley or dill
  • 1 tbsp olive oil or olive oil spray for pan-frying

Instructions

  1. Grate the zucchinis using a box grater or a food processor.
  2. Place the grated zucchini in a clean kitchen towel and squeeze out the excess moisture.
  3. Combine the grated zucchini, eggs, oat flour, Parmesan cheese, Greek yogurt, minced garlic, sea salt, black pepper, dried herbs, and chopped herbs in a large mixing bowl.
  4. Heat a non-stick skillet over medium heat and add a little olive oil.
  5. Scoop about ¼ cup of the batter into the skillet and flatten each scoop slightly.
  6. Cook the fritters for about 3–4 minutes on each side until golden brown and cooked through.
  7. Drain them on paper towels and serve warm.

Notes

Serve with a dollop of Greek yogurt or tzatziki for added flavor. Store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
