Ingredients

- 1 cup rolled oats
- 1 cup cottage cheese
- 2 eggs
- 1/2 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup fresh or frozen blueberries
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, blend the rolled oats, cottage cheese, eggs, honey, and vanilla until smooth.
- Add in the baking powder, baking soda, and salt, mixing until well combined.
- Gently fold in the blueberries, taking care not to crush them.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool slightly before serving.
Notes
Serve warm with butter or cream cheese, or drizzle extra honey or maple syrup on top. They can be stored in an airtight container in the fridge for 4-5 days or frozen for 2-3 months.
