Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 2 cups potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
  2. Add the diced potatoes and pour in the chicken broth. Sprinkle in the thyme, salt, and pepper. Bring to a boil.
  3. Reduce the heat and let it simmer for 20-25 minutes, or until the potatoes are tender. Stir occasionally.
  4. Once the potatoes are cooked, stir in the shredded chicken. Allow it to heat through for an additional 5 minutes.
  5. Taste your soup and adjust the seasoning as needed.
  6. Serve hot, garnished with fresh parsley.

Notes

For a vegetarian version, substitute chicken broth with vegetable broth and chickpeas or lentils. You can also add a tablespoon of hot sauce for a spicy kick.
