- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 2 cups potatoes, diced
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 2 teaspoons dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
- Add the diced potatoes and pour in the chicken broth. Sprinkle in the thyme, salt, and pepper. Bring to a boil.
- Reduce the heat and let it simmer for 20-25 minutes, or until the potatoes are tender. Stir occasionally.
- Once the potatoes are cooked, stir in the shredded chicken. Allow it to heat through for an additional 5 minutes.
- Taste your soup and adjust the seasoning as needed.
- Serve hot, garnished with fresh parsley.
Notes
For a vegetarian version, substitute chicken broth with vegetable broth and chickpeas or lentils. You can also add a tablespoon of hot sauce for a spicy kick.
