- 4 chicken breasts
- 1 cup ricotta cheese
- 1 cup spinach, chopped
- 1/2 cup mozzarella cheese, shredded
- 2 tablespoons fresh herbs (such as basil or parsley), chopped
- 1 clove garlic, minced
- Salt and pepper to taste
- Olive oil
- 1/2 cup marinara sauce (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the ricotta cheese, chopped spinach, shredded mozzarella cheese, fresh herbs, minced garlic, salt, and pepper in a mixing bowl. Mix until well blended.
- Lay the chicken breasts flat and place a generous amount of the ricotta mixture in the center of each breast.
- Roll the chicken breasts tightly around the filling and secure them with toothpicks.
- Heat olive oil in an oven-safe skillet over medium heat and sear the chicken rolls until golden brown on both sides.
- Pour marinara sauce over the chicken rolls if using.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through.
- Serve hot.
Notes
Don’t overfill the chicken and season it before rolling. Secure the rolls well and check cooking times to avoid dryness.
