Delicious chicken rolls filled with creamy ricotta, fresh spinach, and herbs, perfect for family gatherings or a cozy dinner.


Ingredients

  • 4 chicken breasts
  • 1 cup ricotta cheese
  • 1 cup spinach, chopped
  • 1/2 cup mozzarella cheese, shredded
  • 2 tablespoons fresh herbs (such as basil or parsley), chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Olive oil
  • 1/2 cup marinara sauce (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the ricotta cheese, chopped spinach, shredded mozzarella cheese, fresh herbs, minced garlic, salt, and pepper in a mixing bowl. Mix until well blended.
  3. Lay the chicken breasts flat and place a generous amount of the ricotta mixture in the center of each breast.
  4. Roll the chicken breasts tightly around the filling and secure them with toothpicks.
  5. Heat olive oil in an oven-safe skillet over medium heat and sear the chicken rolls until golden brown on both sides.
  6. Pour marinara sauce over the chicken rolls if using.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through.
  8. Serve hot.

Notes

Don’t overfill the chicken and season it before rolling. Secure the rolls well and check cooking times to avoid dryness.
