Instructions
- Heat a skillet over medium heat and add the taco-seasoned ground beef. Cook until browned, breaking it up with a wooden spoon as it cooks.
- Preheat your oven to 400°F (200°C). Chop sweet potatoes into bite-sized pieces and spread them on a baking sheet. Drizzle with olive oil, salt, and pepper. Roast for 25-30 minutes until fork-tender and caramelized.
- In bowls, layer the cooked ground beef, followed by roasted sweet potatoes, and a scoop of cottage cheese.
- Top with sliced avocado and drizzle with hot honey. Serve warm.
