Description
A comforting dish featuring tender chicken in a creamy Tuscan sauce, perfect for busy weeknights.
Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- 1/2 cup Parmesan cheese, grated
- 2 cups spinach, fresh
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the crockpot, making sure they lay flat.
- In a separate bowl, mix together the heavy cream, chicken broth, sun-dried tomatoes, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper until everything blends beautifully.
- Pour this creamy mixture over the chicken breasts in the crockpot, ensuring it covers them evenly.
- Set your crockpot to cook on low for 6-8 hours or high for 3-4 hours. The longer you let it cook, the more tender the chicken becomes.
- In the last 30 minutes of cooking, throw in the fresh spinach and stir it in. Let it wilt and absorb the flavors.
- Serve warm over a bed of rice, fluffy mashed potatoes, or with slices of warm Italian bread.
Notes
Store leftovers in an airtight container in the fridge for up to 3-4 days. For longer storage, freeze in airtight containers for up to 2-3 months.
