Ingredients

  • 2 TBSP yeast
  • 1 cup warm water
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1 stick butter (melted)
  • 1/2 cup warm milk
  • 2 eggs
  • 2 egg yolks
  • 4 1/2 cups all-purpose flour
  • 3 cups powdered sugar
  • 1/2 cup water
  • 1/4 tsp vanillin (vanilla sugar)

Instructions

  1. Mix together the warm water and yeast in a small bowl. Let it sit for about 5 minutes until it becomes frothy.
  2. Combine the sugar, melted butter, warm milk, salt, eggs, and egg yolks in a large mixing bowl. Whisk until smooth.
  3. Pour the activated yeast mixture into the bowl with the other ingredients. Stir to combine well.
  4. Add the flour gradually, one cup at a time, mixing after each addition until the dough comes together.
  5. Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
  6. Place the dough in a greased bowl, cover with a towel, and let it rise in a warm area for about 60 minutes, until it doubles in size.
  7. Punch down the dough and roll it out to about 1/2-inch thickness on a lightly floured surface.
  8. Use a donut cutter or two round cookie cutters to cut your donuts and place them on a parchment-lined baking sheet.
  9. Let the shaped donuts rise for an additional 30 minutes covered with a towel.
  10. Heat oil in a deep fryer or skillet to 350°F (175°C). Fry the donuts in small batches until golden brown, about 1 minute per side.
  11. Whisk together the powdered sugar, water, and vanillin until smooth while the donuts cool slightly.
  12. Dip the warm donuts into the glaze and let the excess drip off, then place them on a wire rack to set.
