- 1 pound chicken breasts or flank steak, sliced into strips
- 1 tablespoon olive oil
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 4–6 flour or corn tortillas
- Optional toppings: sour cream, guacamole, salsa, shredded cheese, lime wedges
Instructions
- Marinate the meat: In a bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and pepper. Add the meat strips and mix well. Let the meat marinate for at least 15 minutes to absorb those fabulous flavors.
- Prep the veggies: While the meat is marinating, slice the red and green bell peppers and the onion. You want them in nice, even slices to ensure they cook uniformly.
- Cook the meat: Heat a skillet over medium-high heat. Once hot, add the marinated meat to the skillet. Cook it for about 5-7 minutes until it’s browned and cooked through. Stir occasionally to ensure even cooking.
- Sauté the veggies: Remove the cooked meat from the skillet and set it aside. In the same skillet, add the sliced bell peppers and onion. Sauté them for about 4-5 minutes until they’re tender and vibrant.
- Combine: Return the cooked meat to the skillet with the vegetables. Mix everything together and let it cook for another 2 minutes to meld the flavors.
- Warm the tortillas: While the meat and veggies finish cooking, warm the tortillas in a separate pan or microwave for a few seconds until they’re pliable.
- Serve hot: Get ready to dig in! Serve the sizzling mixture in warm tortillas topped with your favorites: sour cream, guacamole, salsa, shredded cheese, or a squeeze of fresh lime.
Notes
