Ingredients

  • 2 cups elbow macaroni
  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 cup diced celery
  • 1/2 cup diced bell pepper
  • 1/4 cup diced red onion
  • Salt and pepper to taste
  • Optional: hard-boiled eggs, chopped

Instructions

  1. Cook the elbow macaroni according to the package instructions. Once it’s done, drain it and let it cool.
  2. In a large bowl, mix together the mayonnaise, apple cider vinegar, and Dijon mustard until smooth.
  3. Add the cooled macaroni, diced celery, bell pepper, red onion, and any optional ingredients you choose to include.
  4. Stir until everything is well combined, ensuring each piece of pasta is coated in the creamy dressing.
  5. Season with salt and pepper to taste. Give it one last stir.
  6. Refrigerate for at least 30 minutes before serving to allow the flavors to develop fully.
