- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup heavy cream
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, mix the flour, granulated sugar, baking powder, and salt.
- Add the cold butter cubes into the dry mixture.
- Pour in the heavy cream and gently stir until everything just comes together.
- Turn the dough out onto a floured surface and knead gently 5-6 times.
- Roll the dough out to about 1-inch thickness and cut out rounds.
- Place these on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until golden brown on top.
- In another bowl, mix the sliced strawberries with powdered sugar and vanilla extract.
- Assemble your shortcakes by splitting the biscuits in half, adding strawberries, and topping with whipped cream.
Notes
Use cold ingredients for flaky biscuits. Don’t overmix the dough to avoid tough biscuits.
