A delicious and easy-to-make homemade vanilla granola, perfect for breakfast or as a snack.
Ingredients

- 2 cups rolled oats
- 1 cup nuts (almonds, walnuts, or your choice)
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- Optional: 1/2 cup dried fruits or chocolate chips
Instructions
- Preheat your oven to 325°F (165°C).
- Combine the rolled oats, nuts, and salt in a large bowl. Mix well to ensure even distribution of ingredients.
- Warm the honey (or maple syrup) and coconut oil in a small saucepan over low heat until melted.
- Remove from heat and add the vanilla extract to the melted mixture.
- Pour the melted mixture over the oat mixture, stirring until everything is well combined and coated.
- Line a baking sheet with parchment paper and spread the granola mixture evenly on the sheet.
- Bake for 20-25 minutes, stirring halfway through to ensure even browning.
- Let it cool completely before adding any dried fruits or chocolate chips, if using.
- Store in an airtight container at room temperature for up to two weeks or freeze for up to three months.
Notes
For variations, experiment with different nuts and sweeteners. Consider adding spices for extra flavor.
