Ingredients

  • 8 boneless, skinless chicken thighs, cut into 1-inch pieces
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp vegetable oil, plus more for searing
  • 1 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 110g (1/3 cup) honey
  • 80ml (1/3 cup) chicken stock
  • 1 tbsp rice vinegar
  • 1 tbsp light soy sauce
  • ½ tsp chilli flakes (optional)
  • 2 tbsp cornstarch
  • 4 tbsp cold water (for slurry)
  • 1 tbsp finely chopped fresh parsley
  • Cooked rice, for serving

Instructions

  1. Pat the chicken pieces dry with paper towels. In a medium bowl, drizzle the chicken with 2 tablespoons of vegetable oil, then sprinkle with salt and black pepper. Toss to coat evenly. Set aside.
  2. Combine minced garlic, honey, chicken stock, rice vinegar, light soy sauce, and optional chilli flakes in a measuring cup. Whisk until well mixed. In a separate bowl, whisk cornstarch with cold water until smooth. Set aside.
  3. Heat a large skillet over medium-high heat. Add vegetable oil and butter. Sear the chicken in batches for 3-4 minutes per side until golden and cooked through. Transfer to a plate.
  4. Reduce heat to medium-low and pour the honey garlic sauce into the skillet. Gently simmer while stirring. Re-whisk the cornstarch slurry and slowly pour it into the sauce, stirring constantly until thickened.
  5. Return chicken to the skillet and toss to coat in the sauce. Simmer for 1-2 minutes.
  6. Serve over cooked rice, garnished with parsley.

Notes

Make sure to pat the chicken dry before seasoning for better searing. Adjust the sweetness by varying the honey amount.
