Description

A delicious and easy side dish featuring roasted carrots glazed with honey and garlic, topped with creamy feta.


Ingredients

  • 1 lb Carrots
  • 2 tbsp Olive oil
  • 2 tbsp Honey
  • 3 cloves Garlic, minced
  • 1 tsp Dried or fresh dill
  • 1/2 cup Feta cheese, crumbled
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cut the carrots into even-sized pieces.
  3. Toss the carrots with olive oil, honey, minced garlic, dill, salt, and black pepper until evenly coated.
  4. Spread the carrots on a baking sheet in a single layer.
  5. Roast in the oven for 20-25 minutes, stirring halfway through, until tender and caramelized.
  6. Remove from the oven and sprinkle with feta cheese before serving.

Serve alongside roasted chicken or grilled fish. Top with fresh herbs for extra flavor.
