  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups cooked white or brown rice
  • 2 ripe avocados, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels
  • 1/4 cup red onion, sliced
  • 3 tablespoons fresh cilantro, chopped
  • 1/2 cup Greek yogurt or sour cream (optional)
  • 1/2 teaspoon chili flakes (optional)

Instructions

  1. Whisk the marinade: In a mixing bowl, whisk together the honey, fresh lime juice, lime zest, minced garlic, soy sauce, olive oil, salt, and pepper to make a flavorful marinade.
  2. Marinate the chicken: Coat the chicken breasts evenly in the marinade. Let them soak for about 10 to 15 minutes to absorb the amazing flavors.
  3. Cook the chicken: Heat a skillet over medium heat. Cook the marinated chicken for 5 to 7 minutes on each side until it’s golden brown and cooked through.
