- 3 tablespoons fresh lime juice

- 1/4 teaspoon black pepper
- 3 cups cooked white or brown rice
- 2 ripe avocados, sliced
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels
- 1/4 cup red onion, sliced
- 3 tablespoons fresh cilantro, chopped
- 1/2 cup Greek yogurt or sour cream (optional)
- 1/2 teaspoon chili flakes (optional)
Instructions
- Whisk the marinade: In a mixing bowl, whisk together the honey, fresh lime juice, lime zest, minced garlic, soy sauce, olive oil, salt, and pepper to make a flavorful marinade.
- Marinate the chicken: Coat the chicken breasts evenly in the marinade. Let them soak for about 10 to 15 minutes to absorb the amazing flavors.
- Cook the chicken: Heat a skillet over medium heat. Cook the marinated chicken for 5 to 7 minutes on each side until it’s golden brown and cooked through.
