- 4 pieces Boneless, Skinless Chicken Breasts
- 3 tablespoons Honey
- 2 tablespoons Lime Juice
- 1 tablespoon Lime Zest
- 2 tablespoons Olive Oil
- 2 cloves Garlic, minced
- 1 teaspoon Cumin
- 1 teaspoon Smoked Paprika
- Salt to taste
- Pepper to taste
- 2 cups Cooked Jasmine or Basmati Rice
- 1 medium Ripe Avocado
- 1 tablespoon Extra Lime Juice
- 1 tablespoon Olive Oil
- Fresh Cilantro or Parsley for garnish
- Chili Flakes for heat
- 1 tablespoon Toasted Sesame Seeds for garnish
Instructions
- In a mixing bowl, whisk together honey, lime juice, lime zest, olive oil, garlic, cumin, smoked paprika, salt, and pepper. Add chicken breasts and coat them in the marinade. Let sit for 15 minutes.
- While marinating, cook rice according to package instructions.
- Heat a large skillet over medium-high heat and add olive oil. Sear marinated chicken breasts for 5-7 minutes on each side until cooked through.
- Slice avocado, drizzle with extra lime juice and olive oil, and season with salt and pepper.
- Once the chicken is cooked, let it rest for a few minutes, slice it, and serve over cooked rice topped with avocado slices.
- Garnish with cilantro or parsley, chili flakes, and toasted sesame seeds.
Notes
Allow chicken to marinate for at least 15 minutes for better flavor absorption. Avoid overcrowding the skillet when cooking chicken.
