Description

Delicious ground beef filling in sweet potato boats, drizzled with hot honey for a sweet and spicy kick.


Ingredients

  • 4 medium sweet potatoes
  • 1 pound lean ground beef (85-90%)
  • 1/4 cup hot honey (divided)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili flakes
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil (divided)
  • 2 tablespoons fresh parsley or cilantro, chopped
  • 1/2 cup crumbled feta or goat cheese (optional)
  • 2 green onions, sliced
  • 1 tablespoon lime juice
  • 1 avocado, sliced (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the sweet potatoes lengthwise and score the flesh. Brush the open side with olive oil and sprinkle with salt and pepper.
  3. Place them cut-side down on the baking sheet and roast for 30-40 minutes until fork-tender.
  4. Heat the remaining olive oil in a skillet over medium heat. Sauté the diced onion for about 3-4 minutes until soft.
  5. Add minced garlic and cook for another 30 seconds.
  6. Stir in ground beef to the skillet and brown for about 6-8 minutes; drain excess grease.
  7. Mix in smoked paprika, cumin, chili flakes, salt, and black pepper. Cook for another minute.
  8. Incorporate 2 tablespoons of hot honey and simmer for 2-3 minutes.
  9. Scoop a small portion out of the roasted sweet potatoes to create a boat and fill them with the beef mixture.
  10. Bake the filled sweet potatoes for an additional 5-7 minutes.
  11. Top with remaining hot honey, feta or goat cheese, fresh herbs, green onions, lime juice, and avocado if desired.
  12. Let rest for 5 minutes before serving.

Notes

Pairs well with a fresh salad or tortilla chips. Store leftovers in the fridge for up to 3-4 days, or freeze for 2-3 months.
