Delicious ground beef filling in sweet potato boats, drizzled with hot honey for a sweet and spicy kick.

- 4 medium sweet potatoes
- 1 pound lean ground beef (85-90%)
- 1/4 cup hot honey (divided)
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili flakes
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil (divided)
- 2 tablespoons fresh parsley or cilantro, chopped
- 1/2 cup crumbled feta or goat cheese (optional)
- 2 green onions, sliced
- 1 tablespoon lime juice
- 1 avocado, sliced (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice the sweet potatoes lengthwise and score the flesh. Brush the open side with olive oil and sprinkle with salt and pepper.
- Place them cut-side down on the baking sheet and roast for 30-40 minutes until fork-tender.
- Heat the remaining olive oil in a skillet over medium heat. Sauté the diced onion for about 3-4 minutes until soft.
- Add minced garlic and cook for another 30 seconds.
- Stir in ground beef to the skillet and brown for about 6-8 minutes; drain excess grease.
- Mix in smoked paprika, cumin, chili flakes, salt, and black pepper. Cook for another minute.
- Incorporate 2 tablespoons of hot honey and simmer for 2-3 minutes.
- Scoop a small portion out of the roasted sweet potatoes to create a boat and fill them with the beef mixture.
- Bake the filled sweet potatoes for an additional 5-7 minutes.
- Top with remaining hot honey, feta or goat cheese, fresh herbs, green onions, lime juice, and avocado if desired.
- Let rest for 5 minutes before serving.
Notes
Pairs well with a fresh salad or tortilla chips. Store leftovers in the fridge for up to 3-4 days, or freeze for 2-3 months.
