- 2 cups All-Purpose Flour
- 2 cups Granulated Sugar
- 3/4 cup Unsweetened Cocoa Powder
- 1 tablespoon Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 1 cup Buttermilk
- 1/2 cup Vegetable Oil
- 2 large Eggs
- 2 teaspoons Vanilla Extract
- 1 cup Boiling Water
- 2 cups Fresh Strawberries
- 1 tablespoon Lemon Juice
- 8 ounces Dark Chocolate
- 2 tablespoons Coconut Oil
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, mix the buttermilk, oil, eggs, and vanilla until smooth.
- Gradually pour the wet mixture into the dry ingredients, stirring gently.
- Carefully add the boiling water to the batter and stir until combined.
- Pour the batter into the prepared pans and bake for 30-35 minutes.
- Cool the cakes for 10 minutes in the pans before transferring to a wire rack to cool completely.
- Prepare the strawberry filling by slicing strawberries and tossing them with lemon juice. Let them sit for 10 minutes.
- Melt dark chocolate with coconut oil in a microwave-safe bowl.
- Place one cake layer on a serving plate, spread the strawberries on top, then add the second cake layer.
- Pour melted chocolate over the top and let it set before serving.
Notes
Store the cake in the refrigerator for up to 4 days. Can also be frozen for up to 3 months.
