Ingredients

  • 2 cups Granulated Sugar
  • 3/4 cup Unsweetened Cocoa Powder
  • 1 tablespoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 cup Buttermilk
  • 1/2 cup Vegetable Oil
  • 2 large Eggs
  • 2 teaspoons Vanilla Extract
  • 1 cup Boiling Water
  • 2 cups Fresh Strawberries
  • 1 tablespoon Lemon Juice
  • 8 ounces Dark Chocolate
  • 2 tablespoons Coconut Oil

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix the buttermilk, oil, eggs, and vanilla until smooth.
  4. Gradually pour the wet mixture into the dry ingredients, stirring gently.
  5. Carefully add the boiling water to the batter and stir until combined.
  6. Pour the batter into the prepared pans and bake for 30-35 minutes.
  7. Cool the cakes for 10 minutes in the pans before transferring to a wire rack to cool completely.
  8. Prepare the strawberry filling by slicing strawberries and tossing them with lemon juice. Let them sit for 10 minutes.
  9. Melt dark chocolate with coconut oil in a microwave-safe bowl.
  10. Place one cake layer on a serving plate, spread the strawberries on top, then add the second cake layer.
  11. Pour melted chocolate over the top and let it set before serving.

Notes

Store the cake in the refrigerator for up to 4 days. Can also be frozen for up to 3 months.
