Ingredients

- 2 cups all-purpose flour
- 1/4 cup vegetable oil
- 1/2 teaspoon salt
- Water (as needed)
- 2 cups potatoes (boiled and mashed)
- 1 cup green peas (cooked)
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- 1 teaspoon chili powder
- Salt to taste
- Oil for frying
Instructions
- Prepare the Dough: In a mixing bowl, combine the flour, salt, and vegetable oil. Gradually add water until the mixture forms a soft dough. Knead the dough for about five minutes, then wrap it in a cloth and let it rest while you prepare the filling.
- Make the Filling: Heat a little oil in a pan. Add the cumin seeds and let them splutter. Next, mix in the boiled potatoes and green peas, followed by garam masala, coriander powder, chili powder, and salt. Cook this mixture for a few minutes, then set it aside to cool.
- Shape the Samosas: Divide the rested dough into small balls. Roll each ball into a thin circle, and then cut each circle in half.
- Forming the Samosas: Take one semi-circle, create a cone shape by folding the straight edge together. Seal the bottom of the cone, then fill it with the potato mixture. Moisten the edges with a bit of water and pinch to seal the filling inside. Repeat this process until you use all the dough and filling.
- Fry the Samosas: Heat oil in a frying pan over medium heat. Gently add the samosas, frying until they turn golden brown and crispy, which usually takes about 5-7 minutes. Use a slotted spoon to remove them and drain any excess oil on paper towels. Serve hot with chutney or your favorite dipping sauce.
