Description

A delicious Kabsa recipe that combines tender chicken and fluffy rice with aromatic spices, perfect for family gatherings.


Ingredients

  • 2 cups basmati rice
  • 1 whole chicken, cut into pieces
  • 4 cups water or chicken broth
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 carrots, grated
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • 2 tablespoons Kabsa spice mix (or a combination of cumin, coriander, cardamom, and cinnamon)
  • Salt to taste
  • Olive oil
  • Fresh cilantro for garnish

Instructions

  1. Rinse the basmati rice under cold water until it runs clear. Soak in water for 30 minutes.
  2. Sauté the chopped onions in olive oil over medium heat until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for another minute.
  4. Brown the chicken pieces on all sides in the pot.
  5. Mix in the diced tomatoes, grated carrots, raisins, and Kabsa spice mix. Season with salt and cook for 5 minutes.
  6. Combine in the broth, bring to a boil, then reduce to a simmer. Cook until chicken is tender, about 30-40 minutes.
  7. Remove the chicken, then add the soaked rice, mix with the remaining broth, and cook until tender, about 15-20 minutes.
  8. Fluff the rice with a fork, arrange the chicken on top, and garnish with slivered almonds and cilantro.

Notes

For added flavor, let Kabsa rest covered for a few minutes before serving.
