A delicious Kabsa recipe that combines tender chicken and fluffy rice with aromatic spices, perfect for family gatherings.
Ingredients

- 2 cups basmati rice
- 1 whole chicken, cut into pieces
- 4 cups water or chicken broth
- 2 onions, chopped
- 4 cloves garlic, minced
- 2 tomatoes, diced
- 2 carrots, grated
- 1/4 cup raisins
- 1/4 cup slivered almonds
- 2 tablespoons Kabsa spice mix (or a combination of cumin, coriander, cardamom, and cinnamon)
- Salt to taste
- Olive oil
- Fresh cilantro for garnish
Instructions
- Rinse the basmati rice under cold water until it runs clear. Soak in water for 30 minutes.
- Sauté the chopped onions in olive oil over medium heat until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute.
- Brown the chicken pieces on all sides in the pot.
- Mix in the diced tomatoes, grated carrots, raisins, and Kabsa spice mix. Season with salt and cook for 5 minutes.
- Combine in the broth, bring to a boil, then reduce to a simmer. Cook until chicken is tender, about 30-40 minutes.
- Remove the chicken, then add the soaked rice, mix with the remaining broth, and cook until tender, about 15-20 minutes.
- Fluff the rice with a fork, arrange the chicken on top, and garnish with slivered almonds and cilantro.
Notes
For added flavor, let Kabsa rest covered for a few minutes before serving.
