Ingredients

- 1 lb ground beef or lamb
- 1 small onion, finely grated
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp paprika
- Salt and pepper to taste
- Olive oil for grilling
Instructions
- Combine the ground meat with the grated onion, minced garlic, chopped parsley, cumin, coriander, paprika, salt, and pepper in a large mixing bowl. Mix until well combined.
- Shape small portions of the mixture into oval patties or long logs, about 4-5 inches long.
- Preheat the grill to medium-high heat, or drizzle a grill pan with olive oil and heat over medium.
- Place the kafta on the grill and cook for 5-7 minutes on each side until nicely charred and reaching an internal temperature of 160°F.
- Let the kafta rest for a few minutes before serving. Serve with warm flatbreads, fresh veggies, tahini sauce, yogurt, and lemon wedges.
Notes
Keep hands wet when shaping kafta to prevent sticking. Don’t overmix the meat to keep it tender.
