  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup diced apples (low sugar variety)
  • Oil for frying or baking

Instructions

  1. Combine almond flour, erythritol, baking powder, cinnamon, and salt in a mixing bowl.
  2. Mix applesauce, eggs, and vanilla extract until smooth in another bowl.
  3. Combine the wet and dry ingredients, then fold in the diced apples gently.
  4. Form small balls of dough and flatten them slightly.
  5. Heat oil in a pan over medium heat and fry the cookies until golden brown on both sides, or bake at 350°F (175°C) for 15-20 minutes.
