Ingredients

- 4 boneless, skinless chicken breasts
- 2 cups cherry tomatoes, halved
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup fresh basil, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken with salt and pepper, cook in skillet for 6-7 minutes per side until browned and cooked through, then set aside.
- In the same skillet, cook halved cherry tomatoes for 3-4 minutes.
- Pour in heavy cream and simmer gently.
- Stir in mozzarella cheese until melted.
- Return chicken to skillet, cover with sauce, and sprinkle with basil.
- Heat everything through for 2-3 minutes and serve hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stove.
