Description

Delightful cookie cups filled with rich, tangy lemon curd, combining two favorite desserts into one sweet treat.


Ingredients

  • 1 cup sugar cookie dough
  • 1/2 cup homemade lemon curd
  • 1 egg
  • 1/4 cup butter
  • 1 tablespoon lemon juice
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Roll the sugar cookie dough into small balls and press them into a mini muffin tin to create little cups.
  3. Bake for 10-12 minutes until they turn lightly golden.
  4. Allow to cool for a few minutes before filling them with homemade lemon curd.
  5. To make the lemon curd, whisk together the egg, butter, lemon juice, and sugar in a saucepan over medium heat, stirring continuously until thickened.
  6. Fill each cookie cup with lemon curd and let set for a few minutes.
  7. Dust with powdered sugar before serving.

Notes

Consider garnishing with lemon zest or mint leaves for extra freshness. They can also be stored in the fridge for up to 3 days or frozen for 2 months.
