- 1 cup sugar cookie dough
- 1/2 cup homemade lemon curd
- 1 egg
- 1/4 cup butter
- 1 tablespoon lemon juice
- Powdered sugar (for dusting)
Instructions
- Preheat the oven to 350°F (175°C).
- Roll the sugar cookie dough into small balls and press them into a mini muffin tin to create little cups.
- Bake for 10-12 minutes until they turn lightly golden.
- Allow to cool for a few minutes before filling them with homemade lemon curd.
- To make the lemon curd, whisk together the egg, butter, lemon juice, and sugar in a saucepan over medium heat, stirring continuously until thickened.
- Fill each cookie cup with lemon curd and let set for a few minutes.
- Dust with powdered sugar before serving.
Notes
Consider garnishing with lemon zest or mint leaves for extra freshness. They can also be stored in the fridge for up to 3 days or frozen for 2 months.
