Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 12 oz. fettuccine pasta (or spaghetti, linguine, or penne)
  • 4 tablespoons unsalted butter
  • 5 cloves garlic (minced)
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1/2 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • Fresh parsley (chopped)
  • Grated Parmesan cheese
  • Crushed red pepper flakes
  • Lemon wedges

Instructions

  1. Prep the Chicken: Season the chicken breasts with salt and pepper. Heat olive oil and 1 tablespoon of butter in a skillet over medium heat. Cook the chicken for 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
  2. Cook the Pasta: In a pot, bring water to a boil and add salt. Cook the fettuccine according to package instructions for al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  3. Make the Sauce: In the same skillet, melt 4 tablespoons of unsalted butter and sauté minced garlic for about 1 minute until fragrant. Add chicken broth, heavy cream, lemon juice, and lemon zest. Let simmer until slightly thickened.
  4. Combine Everything: Slice the cooked chicken and return to the skillet. Add the cooked pasta and toss to coat with the sauce. Adjust seasoning as necessary.
  5. Serve: Garnish with fresh parsley, grated Parmesan, and crushed red pepper flakes. Include lemon wedges on the side.

Notes

Store leftovers in the fridge for up to 3 days in an airtight container. Can be frozen for up to 2 months.
