- 4 boneless, skinless chicken breasts
- Salt and freshly ground black pepper
- 1 tablespoon olive oil
- 1 tablespoon butter
- 12 oz. fettuccine pasta (or spaghetti, linguine, or penne)
- 4 tablespoons unsalted butter
- 5 cloves garlic (minced)
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 1/2 cup freshly squeezed lemon juice
- Zest of 1 lemon
- Fresh parsley (chopped)
- Grated Parmesan cheese
- Crushed red pepper flakes
- Lemon wedges
Instructions
- Prep the Chicken: Season the chicken breasts with salt and pepper. Heat olive oil and 1 tablespoon of butter in a skillet over medium heat. Cook the chicken for 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
- Cook the Pasta: In a pot, bring water to a boil and add salt. Cook the fettuccine according to package instructions for al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
- Make the Sauce: In the same skillet, melt 4 tablespoons of unsalted butter and sauté minced garlic for about 1 minute until fragrant. Add chicken broth, heavy cream, lemon juice, and lemon zest. Let simmer until slightly thickened.
- Combine Everything: Slice the cooked chicken and return to the skillet. Add the cooked pasta and toss to coat with the sauce. Adjust seasoning as necessary.
- Serve: Garnish with fresh parsley, grated Parmesan, and crushed red pepper flakes. Include lemon wedges on the side.
Notes
Store leftovers in the fridge for up to 3 days in an airtight container. Can be frozen for up to 2 months.
