- 4 chicken breasts
- 1 cup pecorino cheese, grated
- 1 cup breadcrumbs
- 2 lemons (zest and juice)
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix together the grated pecorino cheese, breadcrumbs, lemon zest, salt, and pepper.
- Coat each chicken breast in fresh lemon juice, then dredge it in the pecorino mixture, pressing to adhere.
- Heat olive oil in a skillet over medium heat and sear the chicken on both sides until golden brown, about 3-4 minutes per side.
- Transfer the seared chicken to a baking dish.
- In the same skillet, add heavy cream and the remaining lemon juice, stirring to combine, then pour over the chicken.
- Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
- Garnish with fresh parsley before serving.
Notes
Serve with a fresh side salad, mashed potatoes, or roasted asparagus. Store leftovers in an airtight container in the fridge for 3-4 days.
