Ingredients

  • 4 chicken breasts
  • 1 cup pecorino cheese, grated
  • 1 cup breadcrumbs
  • 2 lemons (zest and juice)
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together the grated pecorino cheese, breadcrumbs, lemon zest, salt, and pepper.
  3. Coat each chicken breast in fresh lemon juice, then dredge it in the pecorino mixture, pressing to adhere.
  4. Heat olive oil in a skillet over medium heat and sear the chicken on both sides until golden brown, about 3-4 minutes per side.
  5. Transfer the seared chicken to a baking dish.
  6. In the same skillet, add heavy cream and the remaining lemon juice, stirring to combine, then pour over the chicken.
  7. Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  8. Garnish with fresh parsley before serving.

Notes

Serve with a fresh side salad, mashed potatoes, or roasted asparagus. Store leftovers in an airtight container in the fridge for 3-4 days.
