- Zest of 1 lemon

- 2 tablespoons coconut oil (melted)
Instructions
- Combine the almond flour, poppy seeds, protein powder, and salt in a large bowl.
- Mix together the honey (or maple syrup), lemon juice, lemon zest, and melted coconut oil in another bowl.
- Pour the wet ingredients into the dry mixture and stir until blended smoothly.
- Roll the mixture into small balls, about the size of a tablespoon.
- Place the energy balls on a lined baking sheet and refrigerate for at least 30 minutes to set.
