Description

A vibrant and healthy lentil salad packed with fresh vegetables, perfect for family gatherings or quick weeknight meals.


Ingredients

  • 1 cup lentils
  • 2 cups water
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1 small red onion, finely chopped
  • 1 carrot, grated
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water.
  2. In a pot, combine the rinsed lentils and water.
  3. Bring it to a boil over high heat.
  4. Once boiling, reduce the heat to a simmer and let it cook for about 20-25 minutes until the lentils are tender.
  5. Drain the lentils in a colander and cool them down.
  6. In a large bowl, mix the cooled lentils with the diced bell pepper, cucumber, red onion, grated carrot, and parsley.
  7. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  8. Pour the dressing over your salad and toss everything gently to combine.
  9. Serve immediately or store in the fridge for a great make-ahead meal.

Notes

For best flavor, allow the salad to chill for at least 30 minutes before serving. Feel free to add extra ingredients like feta or avocado.
