Ingredients

- 1 cup lentils
- 2 cups water
- 1 bell pepper, diced
- 1 cucumber, diced
- 1 small red onion, finely chopped
- 1 carrot, grated
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse the lentils under cold water.
- In a pot, combine the rinsed lentils and water.
- Bring it to a boil over high heat.
- Once boiling, reduce the heat to a simmer and let it cook for about 20-25 minutes until the lentils are tender.
- Drain the lentils in a colander and cool them down.
- In a large bowl, mix the cooled lentils with the diced bell pepper, cucumber, red onion, grated carrot, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over your salad and toss everything gently to combine.
- Serve immediately or store in the fridge for a great make-ahead meal.
Notes
For best flavor, allow the salad to chill for at least 30 minutes before serving. Feel free to add extra ingredients like feta or avocado.
