Ingredients

- 2 ripe avocados
- 1 cup hummus
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped pistachios
- 1/2 cup cherry tomatoes, halved
- 1/4 small red onion, thinly sliced
- 4 slices of bread (your choice)
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
- Toast the bread slices to your desired level of crispness.
- While the bread is toasting, mash the ripe avocados in a bowl and season with salt and pepper.
- Spread a layer of hummus on each piece of toasted bread.
- Add a generous portion of the mashed avocado on top of the hummus.
- Sprinkle crumbled feta cheese, chopped pistachios, halved cherry tomatoes, and sliced red onion over the avocado.
- Garnish with fresh herbs if desired and serve immediately.
Notes
Best enjoyed fresh but can be stored in an airtight container for up to two days. Avoid freezing due to texture changes.
