  • 2 pounds Yukon gold or russet potatoes, diced into ½-inch cubes
  • 3 tablespoons olive oil, divided (2 tbsp for potatoes, 1 tbsp for beef)
  • 1 teaspoon smoked paprika
  • 1½ teaspoons ground cumin, divided (1 tsp for potatoes, ½ tsp for beef)
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 pound ground beef (85% lean recommended)
  • 1 teaspoon chili powder
  • ½ teaspoon onion powder
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 1 cup canned black beans, rinsed and drained
  • 1 cup frozen or canned corn, warmed
  • 1 red bell pepper, diced
  • ½ cup chopped red onion
  • 1 avocado, sliced
  • ½ cup shredded cheddar or Mexican cheese blend
  • ½ cup sour cream or plain Greek yogurt
  • ¼ cup chopped fresh cilantro (optional)
  • 1 lime, cut into wedges

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the diced potatoes with 2 tablespoons of olive oil, smoked paprika, 1 teaspoon of cumin, garlic powder, salt, and black pepper. Spread the seasoned potatoes on a baking sheet and roast for about 25-30 minutes, flipping halfway through.
  3. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the ground beef, breaking it up as it cooks until no longer pink.
  4. Season the beef with chili powder, onion powder, crushed red pepper flakes, and a pinch of salt and pepper. Cook until slightly crispy around the edges.
  5. Warm the black beans and corn in a small pot.
  6. Assemble your bowls by layering roasted potatoes, seasoned beef, black beans, corn, diced pepper, onion, and cheese. Top with sour cream and fresh avocado.
  7. Serve and enjoy your beautifully assembled bowls!
