Ingredients

  • 200g Lotus Biscoff cookies
  • 100g unsalted butter, melted
  • 400g cream cheese, softened
  • 100g sugar
  • 200ml heavy cream
  • 1 tsp vanilla extract
  • 2 tbsp Lotus Biscoff spread

Instructions

  1. Prepare the crust: Crush the Lotus Biscoff cookies into fine crumbs and mix them with melted butter. Press the mixture firmly into the bottom of a round dish.
  2. Cream the cheese: Beat the softened cream cheese and sugar in a bowl until smooth. Add the vanilla extract and mix well.
  3. Whip the cream: Whip the heavy cream until soft peaks form, then gently fold it into the cream cheese mixture.
  4. Add the Biscoff spread: Mix the spread into the creamy filling until smooth.
  5. Assemble the cheesecake: Pour the filling over the cookie base and smooth the top with a spatula.
  6. Chill out: Cover and refrigerate for at least 4 hours or overnight until set.
  7. Serve and enjoy: Slice the cheesecake and garnish with crushed Lotus Biscoff cookies if desired.
