- 200g Lotus Biscoff cookies
- 100g unsalted butter, melted
- 400g cream cheese, softened
- 100g sugar
- 200ml heavy cream
- 1 tsp vanilla extract
- 2 tbsp Lotus Biscoff spread
Instructions
- Prepare the crust: Crush the Lotus Biscoff cookies into fine crumbs and mix them with melted butter. Press the mixture firmly into the bottom of a round dish.
- Cream the cheese: Beat the softened cream cheese and sugar in a bowl until smooth. Add the vanilla extract and mix well.
- Whip the cream: Whip the heavy cream until soft peaks form, then gently fold it into the cream cheese mixture.
- Add the Biscoff spread: Mix the spread into the creamy filling until smooth.
- Assemble the cheesecake: Pour the filling over the cookie base and smooth the top with a spatula.
- Chill out: Cover and refrigerate for at least 4 hours or overnight until set.
- Serve and enjoy: Slice the cheesecake and garnish with crushed Lotus Biscoff cookies if desired.
