Ingredients

  • 150g powdered sugar
  • 250ml heavy whipping cream

Instructions

  1. Preheat your oven to 175°C (350°F).
  2. Prepare the crust: Crush the Lotus Biscoff cookies into fine crumbs, mix with melted butter, and press into a springform pan. Bake for 8-10 minutes until golden brown. Let it cool.
  3. Make the filling: Beat the cream cheese and powdered sugar until smooth, then add heavy whipping cream, vanilla, and cinnamon. Mix until thickened.
  4. Combine and chill: Pour the cheesecake mixture over the cooled crust, cover, and refrigerate for at least 4 hours or overnight.
  5. Serve it up: Release sides of the springform, garnish with extra cookies if desired, slice, and enjoy!
