- 500g cream cheese, softened
- 150g powdered sugar
- 250ml heavy whipping cream
- 1 tsp vanilla extract

Instructions
- Preheat your oven to 175°C (350°F).
- Prepare the crust: Crush the Lotus Biscoff cookies into fine crumbs, mix with melted butter, and press into a springform pan. Bake for 8-10 minutes until golden brown. Let it cool.
- Make the filling: Beat the cream cheese and powdered sugar until smooth, then add heavy whipping cream, vanilla, and cinnamon. Mix until thickened.
- Combine and chill: Pour the cheesecake mixture over the cooled crust, cover, and refrigerate for at least 4 hours or overnight.
- Serve it up: Release sides of the springform, garnish with extra cookies if desired, slice, and enjoy!
Notes
For a firmer cheesecake, consider adding gelatin to the mixture. Be patient and chill overnight for best results.
