Ingredients

  • 1 head of cabbage, chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks of celery, diced
  • 1 bell pepper, diced
  • 3 cloves of garlic, minced
  • 6 cups of vegetable broth
  • 1 can of diced tomatoes
  • 1 teaspoon of thyme
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1 tablespoon of olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic. Sauté until the onion is soft and fragrant.
  3. Toss in the diced carrots, celery, and bell pepper. Cook until they start to become tender.
  4. Stir in the chopped cabbage and let it cook for a few more minutes until it’s slightly wilted.
  5. Pour in the vegetable broth and add the canned diced tomatoes.
  6. Season the mixture with thyme, salt, and pepper.
  7. Bring everything to a boil, then reduce the heat and let it simmer for about 30 minutes, or until all the vegetables are tender.
