Description

Delicious stuffed bell peppers filled with a savory mix of rice, beans, and spices.


Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix the cooked rice, black beans, corn, cumin, paprika, salt, and pepper.
  4. Stuff the mixture into each bell pepper and place them in a baking dish.
  5. Top each pepper with shredded cheese.
  6. Bake for 25-30 minutes until the peppers are tender.
  7. Garnish with fresh cilantro before serving.

Notes

For added flavor, you can include diced tomatoes in the filling.
